2 ripe mangoes, peeled and diced

1/3 cup red onion, finely diced

1 jalapeño, seeded and minced (leave seeds if you want more heat)

1/2 red bell pepper, diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1/4 tsp salt

Optional: 1/2 avocado, diced
Instructions
1. Dice the mangoPeel the mangoes and cut the flesh into small cubes. Place in a medium mixing bowl.
2. Prep the veggiesFinely dice the red onion, jalapeño, and red bell pepper.
3. Combine veggiesAdd the onion, jalapeño, bell pepper, and cilantro to the bowl with the mango.
4. Add citrusSqueeze fresh lime juice over the mixture and sprinkle with salt.
5. Mix gentlyStir everything together carefully so the mango keeps its shape.
6. Chill and serveLet the salsa sit for about 10–15 minutes to allow the flavors to blend. Add avocado right before serving if using.
