Ingredients
For the salad:
- 4 cups watermelon (cubed)
- 1 cup blueberries
- 4 cups arugula or mixed greens
- 1/2 cup goat cheese (crumbled)
- 1/4 cup red onion (thinly sliced)
- 1/4 cup toasted pecans or walnuts
- Fresh mint or basil leaves
For the dressing:
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tsp lemon juice
- Salt and black pepper, to taste
Instructions
1. Prepare the salad
Add the arugula or greens to a large serving bowl. Top with watermelon, blueberries, red onion, toasted nuts, and goat cheese.
2. Make the dressing
Whisk together olive oil, balsamic vinegar, honey, lemon juice, salt, and pepper until smooth.
3. Assemble
Drizzle the dressing over the salad just before serving. Toss lightly.
4. Finish and serve
Top with fresh mint or basil for extra brightness and serve chilled.
